Artichokes are a member of the thistle family. They grow on stalks, with smaller or baby artichokes growing closer to the ground than regular size artichokes. Artichokes are easy to prepare and are a good source of vitamin C.

Selecting:
When selecting artichokes, look for heavy artichokes with a soft green color and tightly packed, closed leaves. Bronzed or frosted leaf tips signal delicate flavor. Avoid moldy or wilted leaves.
Check the stem of the artichoke: A dark brown or black stem at the point of the cut is an indicator that the artichoke might be old.
Avoid buying an artichoke that has signs of brown or soft spots. This can be an indicator that the artichoke is rotten
Storage:
For refrigerated storage, slice a dime width off of the Artichoke stem, sprinkle the raw Artichoke stems with water to prevent them from drying out. (Do not wash artichokes before storing them.) and refrigerate them in an airtight plastic bag. Although best if you cooked them within five to seven days after you buy them. they'll keep for a week or two if stored properly and handled gently. It’s best Availability: |
